It’s Tri-OREO!

I tried taking a stab at making a pun, possibly in vain, with the title. Ah well, just as much. Maybe next time.

You know how you’re always waiting for a cake to rise and set in the oven, with the fear that it just might crack or collapse the minute you take it out. And wouldn’t it be just marvelous if you didn’t have to come across that fear to begin with? Well here I am, bringing you a recipe that won’t have you rushing to the oven every five minutes.

A no-bake cheesecake combines the power of freshly whipped cream to set your cake, all the while ensuring that the fluffiness is not compromised. Personally I love a light, fluffy cheesecake that gives me the double joy of enjoying it without the guilt of enjoying it. 

You can make this in any cheesecake style, may it be your typical New York, nutella, chocolate, what have you. But who doesn’t love Oreos, am I right? An Oreo crumb crust, with a whipped cream-cream cheese filling stuffed with chopped Oreo bits, and  top coated with Oreo crumbs–it’s a trio of Oreo, a tri-OREO. Ok, I’ll stop. Enjoy!


No Bake Oreo Cheesecake

Equipment:

  • Springform pan- 10-¾”
  • Handheld mixer
  • Mixing bowls
  • Silicon spatula 
  • Food processor

Ingredients:

  • Oreos- 30
  • Melted butter- 5 tbsp
  • Cream cheese- 2 bricks (16 oz- room temperature)
  • Whipping cream- 2 cups
  • Powdered sugar- ⅓ – ½ cup
  • Vanilla extract- 1 tbsp
  • Chopped Oreos- 10 (optional)

Process:

  • Lightly grease the springform pan and set aside.
  • Separate the Oreo cookies and scrape the cream off to a mixing bowl. 
  • Place the separated cookies into the food processor and blitz until crumbs are formed. Set ½ cup of the crumbs aside.
  • Pour the melted butter into the remaining crumbs and mix until combined. Press the crumbs into the base of the prepared pan and press down into an even layer. Chill the base in the refrigerator while the filling is made.
  • Place the cream cheese and half of the sugar into the bowl with the Oreo cream. Beat until smooth and combined. Add the vanilla and mix again. Set aside.
  • In another mixing bowl, pour the whipping cream and the remaining sugar. Whip until firm peaks form. 
  • Fold in the whipped cream into the cream cheese mixture. If adding chopped oreos, fold them in now delicately.
  • Pour the filling into the chilled oreo crumb base and smooth out to an even layer.
  • Sprinkle the remaining Oreo crumbs across the top.
  • Cover the pan and chill for at least 6 hours, preferably overnight.
