Oat Flour Pancakes

Week 6/52.

Continuing on the trend of easy and simple, this week I bring to you oat flour pancakes. A different take on pancakes, this brings the flavor and goodness of oats without being boring and typical oats. Plus, pancakes! Who doesn’t love pancakes?

Resembling very much your usual pancakes, you can top yours with fresh fruit, yogurt, and maple syrup. I topped mine with blueberries, greek yogurt and honey. This is also a great meal prep idea for busy weekday mornings when you can’t be bothered to make breakfast. Delicious, healthy, a perfect start to the day!

What you will need:

  • 1 cup rolled oats
  • 2 eggs
  • ½ cup of milk (use non dairy if preferred)
  • 1-2 tsp sugar
  • Pinch of salt
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • Butter (for cooking pancakes)
  • Optional toppings: maple syrup, honey, fresh fruit, yogurt, go wile!

What you will do:

  • Using a high powered blender, grind the oats to a fine powder.
  • In a measuring cup, mix the wet ingredients.
  • Add the dry ingredients (flour, sugar, baking powder, salt).
  • Mix until combined.
  • Using butter in a pan or skillet, pour batter and cook the pancakes until brown.
  • Serve right away and enjoy!
